Sauce Vierge

This is a lovely, fresh, healthy, sauce that can pump up a wide variety of foods: eggs, beans, fish, and soups.

Servings: 4


3/4 cup mixed organic cherry tomatoes (finely diced)

1 small shallot (finely diced)

1 tbsp capers (roughly chopped)

1 clove garlic (finely chopped)

1/2 tbsp chives (chopped)

1/2 tbsp Italian parsley (chopped)

1/2 tbsp basil (torn)

Juice of 1/2 a lemon

2 tbsp olive oil 

salt and pepper to taste



Prepare ingredients and mix together in bowl. Check seasoning add more salt and pepper if needed. The beauty of this sauce is that it can be tweaked to personal tastes. If you like citrus add more lemon. Like capers? Add more. Big fan of herbs? Add different herbs like thyme, rosemary, chervil, or tarragon. Go wild!
